Eurasian Bistro is owned and operated by Paul Nguyen, a passionate and experienced individual with a deep love for Vietnamese cuisine. Paul’s background and vision for Eurasian Bistro have shaped the restaurant and created a unique dining experience for all customers.
Our Owner
Paul Nguyen’s journey began in Saigon, Vietnam, where he was born. In 1977, two years after the fall of Saigon, his family escaped from Vietnam on a boat. They spent nearly a year in a refugee camp in Indonesia before finally settling in Houston, Texas, in the United States.
With a strong educational background in engineering, Paul embarked on a successful career. He worked at the NASA Johnson Space Center, designing hardware for the space shuttle’s closed-circuit television system, and contributed to space shuttle telemetry processing systems in the mission control center. Later, Paul joined Microsoft and played a crucial role in defining and developing the oil and gas technical architecture vision and technology roadmap for the company.
After retiring in 2013, Paul relocated to Pensacola in 2015. And in 2022, he took on a new challenge by opening Eurasian Bistro. Paul’s mission is to bring awareness of the unique Vietnamese cuisine to the masses, offering an experience that combines authentic flavors with French influences in a friendly and welcoming ambiance.
