About Paul Nguyen
Paul Nguyen, the owner of Eurasian Bistro, has an inspiring background that has shaped both his personal and professional journey. Born in Saigon, Vietnam, he experienced a difficult start in life due to the political unrest in his home country. In 1977, two years after the fall of Saigon, Paul and his family made a daring escape, boarding a small boat in search of a better future.
Their journey led them to a refugee camp in Indonesia, where they stayed for less than a year. Eventually, Paul and his family found their new home in Houston, Texas, where they settled and began rebuilding their lives.
Background and Escape from Vietnam
Paul Nguyen’s story is a testament to the resilience and determination of the human spirit. Growing up in Saigon during a tumultuous time, Paul witnessed the fall of his beloved city. Faced with an uncertain and dangerous environment, his family made the courageous decision to escape by boat.
Their journey was perilous, filled with hardships and uncertainties. But through it all, Paul and his family held onto hope and the belief that they would find a safer, better life. Their resilience and determination carried them through, eventually leading them to the shores of the United States.
Arrival in the United States
In their search for a fresh start, Paul and his family arrived in the United States, seeking refuge and a new beginning. They settled in Houston, Texas, where they embraced their new home and the opportunities it provided.
Despite the challenges of adapting to a new culture and language, Paul thrived in his new environment. He pursued his education, eventually earning a Bachelor of Science degree in electrical engineering from The University of Houston. This was just the beginning of an extraordinary career that would lead him to great achievements in the tech industry and beyond.

Career at Microsoft
Paul’s journey in the corporate world began in 1999 when he joined Microsoft. He quickly made an impact with his expertise in the oil and gas industry. Paul took on the responsibility of defining and developing an oil and gas technical architecture vision at Microsoft, shaping the company’s long-term technology roadmap.
One of his notable achievements was leading the development and organization of the Microsoft Upstream Reference Architecture Initiative. This collaborative effort between Microsoft and industry partners aimed to establish a common reference architecture in the oil and gas industry. Paul’s technical strategy and leadership played a crucial role in enhancing productivity and integration within the industry.
Technical Roles at NASA
Paul’s passion for innovation and exploration extended beyond the oil and gas industry. He also held technical roles at the NASA Johnson Space Center, where he contributed to the design of hardware for the space shuttle’s closed circuit television system (CCTV). Additionally, he worked in the mission control center, focusing on space shuttle telemetry processing systems.
Throughout his career, Paul’s dedication to technological advancements and his ability to tackle complex challenges earned him recognition and respect in the industry.

Retirement and Move to Pensacola
After a successful career spanning many years, Paul decided to retire from the corporate world in 2013. Seeking a change of pace and a new chapter in his life, he moved to Pensacola in 2015. The tranquil beauty of the coastal city and the warm, welcoming community captivated him, making it the perfect place to begin his next adventure.
Starting the Eurasian Bistro
After a well-deserved hiatus, Paul felt a stirring within him, a desire to embark on a new challenge. In 2020, he fulfilled his dream of opening Eurasian Bistro, a restaurant that celebrates the vibrant and diverse flavors of Vietnamese cuisine.
With a deep appreciation for the culinary traditions of his homeland, Paul wanted to create an experience that would introduce people to the unique and delicious dishes Vietnam has to offer. At Eurasian Bistro, guests can indulge in a fusion of Vietnamese and French-inspired flavors, harmoniously blending traditional ingredients and techniques with modern twists.
