History of Paul Nguyen

To truly appreciate Eurasian Bistro and its mission, it’s essential to understand the man behind it all—Paul Nguyen. Born in Saigon, Vietnam, Paul’s life took a dramatic turn when his family escaped from Vietnam on a boat in 1977, just two years after the fall of Saigon. After spending some time in a refugee camp in Indonesia, Paul and his family eventually made their way to the United States, settling in Houston, Texas.

Paul’s journey didn’t end there, though. He went on to embark on a successful career, working for both Microsoft and NASA for several years. However, after a 7-year hiatus/retirement, Paul felt the calling to take on a new challenge, one that would allow him to share the unique flavors of Vietnamese cuisine with the world.

Escape from Vietnam

The journey of Paul’s family escaping Vietnam paints a vivid picture of resilience and determination in the face of adversity. Fleeing the country on a small boat amidst political turmoil, they sought a better and safer life for themselves. Their bravery and strength during this time highlight the deep-rooted values that Paul brings to Eurasian Bistro.

Settling in the United States

After arriving in the United States, Paul’s family settled in Houston, Texas, where they built their new life. The experience of immigrating to a new country, adapting to a different culture, and overcoming language barriers undoubtedly shaped Paul’s perspective on life and instilled in him a strong work ethic and drive for success.

Career and Retirement

Paul’s career path led him to work for tech giants Microsoft and NASA, where he honed his skills and made a significant impact. However, after dedicating many years to the corporate world, he decided it was time for a change. In 2013, Paul retired from his high-profile career and moved to Pensacola, Florida, in 2015. Little did he know that this move would mark the beginning of a new chapter with Eurasian Bistro.

Bringing Awareness of Vietnamese Cuisine

Vietnamese cuisine is a true culinary marvel, brimming with vibrant flavors, fresh ingredients, and a harmonious balance of sweet, sour, salty, and spicy. However, it’s often overlooked or underrepresented in many parts of the world. Eurasian Bistro seeks to change that by introducing the community to the wonders of Vietnamese food, one dish at a time.

Combining Authenticity and French Influences

As a Vietnamese-French fusion restaurant, Eurasian Bistro beautifully blends the traditional flavors of Vietnam with the elegant techniques and influences of French cuisine. This unique combination creates a menu that is both familiar and exciting, appealing to a diverse range of palates.

Authentic Vietnamese Dishes

Now, let’s delve into the heart of Eurasian Bistro—the delightful array of authentic Vietnamese dishes they have to offer. Each dish is carefully crafted to showcase the distinct flavors and textures that make Vietnamese cuisine so beloved.

1. Pho

No Vietnamese food experience is complete without a steaming bowl of Pho. This iconic noodle soup features a fragrant broth, tender slices of beef or chicken, and an abundance of fresh herbs and rice noodles. The depth of flavors and comforting qualities of Pho have made it a true staple of Vietnamese cuisine.

2. Banh Mi

Banh Mi is a Vietnamese sandwich that perfectly encapsulates the fusion of French and Vietnamese flavors. The crusty baguette is filled with various savory ingredients such as pickled carrots, daikon radish, cilantro, cucumber, and a choice of proteins like grilled pork, lemongrass chicken, or tofu. Each bite offers a delightful mix of textures and a symphony of flavors.

3. Bun Cha

Bun Cha is a classic Vietnamese dish that features grilled pork patties served alongside vermicelli noodles, fresh herbs, and a tangy dipping sauce. The smoky and savory flavors of the grilled pork meld beautifully with the fresh and zesty components, creating a dish that is both satisfying and refreshing.

4. Goi Cuon

Goi Cuon, also known as Vietnamese spring rolls or summer rolls, are a lighter alternative to their fried counterpart. These translucent rice paper rolls are filled with a delicious combination of fresh herbs, vermicelli noodles, and either shrimp, pork, or tofu. They are typically served with a flavorful peanut dipping sauce, adding a delightful nuttiness to each bite.

5. Cha Ca

Cha Ca is a famous street food dish from Hanoi that showcases the delicate balance of flavors in Vietnamese cuisine. It consists of turmeric-marinated fish, typically white fish like catfish or halibut, that is pan-fried with fragrant dill and served over vermicelli noodles. The dish is completed with a combination of herbs, peanuts, and a nuoc cham dipping sauce.
