Eurasian Bistro is owned and operated by Paul Nguyen, a remarkable individual with a fascinating background. Paul was born in Saigon, Vietnam, and his family escaped from Vietnam on a boat in 1977, just two years after the fall of Saigon. After spending less than a year in a refugee camp in Indonesia, his family made their way to the United States and eventually settled in Houston, Texas.
Paul’s career in technology is equally impressive. He joined Microsoft in 1999 and played a crucial role in defining and developing the company’s oil and gas technical architecture vision and long-term technology roadmap. He also worked at the NASA Johnson Space Center, designing hardware for the space shuttle’s closed circuit television system and contributing to space shuttle telemetry processing systems. With a Bachelor of Science degree in electrical engineering from The University of Houston, Paul has had a diverse and successful career.
In 2013, Paul retired from the corporate world and made the move to Pensacola in 2015. After a seven-year hiatus/retirement, he decided to take up a new challenge: opening Eurasian Bistro. Paul’s mission with Eurasian Bistro is to introduce the masses to the unique and flavorful Vietnamese cuisine. He envisions an experience that not only offers delicious food but also provides a friendly ambiance that keeps customers coming back for more.
