Eurasian Bistro was founded by Paul Nguyen, a man with a captivating personal story. Born in Saigon, Vietnam, Paul and his family faced a challenging journey when they escaped Vietnam on a boat in 1977, just two years after the fall of Saigon. After spending time in a refugee camp in Indonesia, they were eventually able to settle in the United States, finding their new home in Houston, Texas.
Despite the hardships he faced, Paul persevered and built an impressive career, working for both Microsoft and NASA. However, after seven years of retirement, Paul felt the need for a new challenge. In 2015, he made the decision to move to Pensacola and pursue his passion for both Vietnamese cuisine and creating a friendly dining atmosphere. This led to the birth of Eurasian Bistro, where Paul’s mission is to introduce the masses to the unique flavors of Vietnamese cuisine while incorporating delightful French influences.

Birth and Escape from Vietnam
Paul Nguyen’s journey begins in Saigon, Vietnam, where he was born. However, due to the political unrest at the time, his family had to make the difficult decision to flee the country. In 1977, they embarked on a treacherous journey, escaping Vietnam on a boat. This was just two years after the fall of Saigon, and the country was in turmoil. The Nguyen family faced numerous challenges and uncertainties during their escape, but their determination to find a better life drove them forward.
Settling in the United States
After spending less than a year in a refugee camp in Indonesia, Paul and his family were finally able to start a new chapter in their lives in the United States. They settled in the diverse city of Houston, Texas, where they embraced their new home and began building a future.
Inspired by his experiences and the opportunities afforded to him in America, Paul pursued a successful career in the corporate world, working for prominent companies such as Microsoft and NASA.
